Regular consumption of strawberries reduces the risk of developing type 2 diabetes. However, studies have shown that the emphasis is on regularity, as occasional strawberry intake is not sufficient to lower blood glucose permanently. For this, it is recommended to consume strawberries at least 2-3 times a week).

Reduces the Rise of Blood Sugar

The relationship between the consumption of strawberries and crystal sugar and their effect on blood glucose levels deserves special attention. As everyone might guess, excessive sugar intake (5-6 teaspoons a day) raises blood sugar levels undesirably.

Surprisingly or not, however, researchers say that sugar consumption of strawberries can reduce this rise in blood sugar in a measurable way.
In one study, at least approx. 15 dkg of fresh strawberries significantly reduced the blood glucose levels of the subjects due to their consumption of crystal sugar. Researchers speculate that polyphenols in strawberries are likely to trigger the above blood-glucose-lowering response in the body.

One such polyphenol, ellagitannin, inhibits the activity of the alpha-amylase enzymes. These latter enzymes are responsible for converting amylose-containing starches into simple sugars (simple carbohydrates), thus reducing the number of simple sugars entering the stream when the activity of the alpha-amylase enzyme is reduced.
